Caper and egg mayonnaise

6 hard boiled eggs

2 tablespoons mayonnaise

1 tablespoon capers

Salt/pepper
Mash eggs and mayonnaise into a paste, then add capers and combine. Season with salt/pepper. Spread onto rounds of sour dough, or use to fill sandwiches.
Cottage cheese and avocado
Scoop flesh from avocado and mash with a fork. Add cottage cheese and herbs and combine. Squeeze with a little lemon juice. Spread over crusty sourdough rounds or use to fill sandwiches with a lettuce leaf or fresh basil leaves.
Roasted red pepper pesto spread

- 2 red capsicums (or small jar of grilled red peppers if you prefer not to roast the capsicums yourself to save time)

- 2 cloves garlic – crushed

- 3 tablespoons olive oil

- 1 tablespoon red wine vinegar

- ¼ cup almonds – chopped

- ¼ cup pinenuts
-
- 2 cups fresh basil leaves

- ½ cup parmesan cheese - grated

- Sea salt – to taste
Roast whole capsicums in a hot oven for 10 – 15 minutes or until skin blackens and flesh is soft. Take out and put in a plastic bag for a couple of minutes – this will make it easier to now remove the skin. Alternatively purchase a small jar of roasted/grilled peppers. Put capsicum into a blender with parmesan, basil, nuts with vinegar and garlic. Pulse to combine roughly. Add olive oil and process to a chunky paste. Season to taste. Use to spread on sourdough rounds, or use as a sauce for pasta.
Lobster with lime mayonnaise
Place lettuce leaves on to 20 slices of bread. Top with a slice of lobster. Drizzle with some lime mayonnaise. Add some fresh herbs like coriander or chervil. Top each with a slice of bread.
*To make lime mayonnaise, add the zest of one lime to 1/3 cup of mayonnaise and stir to combine thoroughly.
